Bonnaroo with Subway

After a couple of long days on the farm at Bonnaroo I know what all my friends have been raving about for years. And I’ll definitely be going back again in years to come. Why? Because Roo isn’t just another music festival. It’s a lifestyle, it’s a mindset, and it’s an experience worth indulging in. If you’re like me and have put off attending because of the camping aspect then you’re missing out. I promise that the camping isn’t actually half that bad, and after spending the day in the hot sun you’ll end up sleeping like a baby.   First off let me answer a few questions that any newbies may have. Yes, it can be hot, but as long as you stay hydrated it’s really not that bad. Then again, after spending a month in India in the heat of summer nothing’s that impossible or too hot anymore. But I promise, it’s not that bad. There are actually plenty of trees to take cover under during the day, and this year Subway’s Green Room was the perfect home base to cool off and fuel up. Nachos that are basically guilt free and are more salad than carb loaded snack? Sign me up. Since Mexico is coming up in a few weeks after all. Summer body? What’s that? And these Loaded Cauliflower Nachos also happen to be the perfect way to celebrate Pride Month. Since they’re basically a rainbow on a plate AND aren’t too terrible for your waistline. Meaning they’re sure to be a hit at any Pride party this year, because after all nachos are always a crowd favorite. Now what if I told you that you could celebrate AND support your local LGBT community at the same time? I know it sounds too good to be true, but it’s not. Which is why I’m incredibly excited to have teamed up with Kroger for today’s post. Cheesy Cauliflower

Is there really anything that cauliflower can’t do? I’m here today to firmly say, “No.” It’s been on heavy repeat in my house for months now, but today’s recipe is a new favorite. Why? Because it’s basically guilt free mac-n-cheese. Made even more delicious by the addition of Colman’s Dry Mustard Powder. Which is why I’m excited to have teamed up with Colman’s today to share the recipe for Cheesy Cauliflower with you guys. I promise you’re going to love it just as much as I did. Even the boyfriend who’s a little cheese-sauce based foods averse was a complete fan, and that’s saying a lot. Trust me. While mac-n-cheese doesn’t typically have much heat I’m here to say that the added heat definitely kicks it up a notch! Plus with their Mustard Powder it’s incredibly easy to add it into the mix without making too much of a mess. Just fold it into the roux when you add other seasonings like salt and pepper. And then you’ve got a delicious new spin on an old classic.

Morning Routines

I’m sharing #MyDolceGusto in my life as part of a NESCAFÉ® sponsored series for Socialstars™, but as always, all thoughts and opinions are my own.  Working from home is a dream come true, really. I get to make my own schedule. Go to bed whenever I like (for the most part) and even sleep in pretty much every day. But as time has went on I’ve finally succumbed to the fact that I’m desperately needing a bit more structure in my work schedule.  Crazy, right? I know, I know. That’s the exact reason most people want to be their own boss. But it’s also the hardest part about being your own boss. Trust me.  Luckily, since I am my own boss that structure is still pretty dang flexible. As in my mornings start off the same each and every day, but I kind of fly by the seat of my pants for the rest of the day. Following the same morning routines have seriously helped up my productivity levels though. Because I actually know what to tackle each and every morning vs. waking up and getting distracted before my coffee is even made. Can y’all relate? Good. Glad I’m not alone.  MY MORNING…
