I appreciate any excuse to have a delicious brunch. And it just so happens that Mother’s Day and brunch go together like champagne and OJ. There really is no better way to show your appreciation for mom than by doing what she’s done for you. All of your life. Because after all, moms deserve a day or two off in the kitchen. Now it’s your turn to whip up a fantastic, home cooked brunch to really pamper her.

And of course no Mother’s Day would be complete without a heartwarming American Greetings Mother’s Day card. Growing up my mom was the card lady, and to this day she still comes armed with a card for every occasion. Something that she has passed onto me over the years. She also taught me that random acts of kindness mean more than just about anything. I’m a big fan of quiche and still remember the first time I made one. It was with my dad for a Mother’s Day brunch at our church. So I figured today’s post would be the perfect time to whip up a new take on a classic. Because I can’t think of a better way to celebrate mom than by sharing the first recipe I remember making!

Chicken sausage has been on repeat in my house lately, and it pairs perfectly with asparagus and goat cheese in today’s recipe. This asparagus quiche recipe is sure to be a crowd pleaser, time after time! And you’re in luck, because I’m also sharing the recipe for homemade crust. It’s delicious, crunchy, and flaky. Your mom will be in awe, and you’ll be the favorite kid for the foreseeable future.

Complete this spread fit for a queen by adding a signature cocktail (or two) and serving my Herbed Skillet Potatoes. Beware though if you’re too good in the kitchen though she may call on you to help out more often. My advice? Embrace it. Knowing your way around the kitchen is a blessing. After all, the stomach is the way to everyone’s heart.

Asparagus Quiche


Ingredients

Scale

Crust

  • 1 cup flour
  • 1/2 tsp. salt
  • 1/4 cup ice water
  • 1/4 cup olive oil

Quiche

  • 4 eggs
  • 1 1/2 cups cream
  • Salt
  • Pepper
  • 1 medium yellow onion, diced
  • Goat cheese
  • 3 chicken sausage links, sliced
  • 4 asparagus spears, sliced in half

Instructions

Crust

  1. Whisk together flour and salt in mixing bowl.
  2. Add water and olive oil, mix to combine.
  3. Press into prepared pie pan and set aside.

Quiche

  1. Preheat oven to 400 degrees.
  2. Brown chicken sausage in cast iron skillet for 6-7 minutes, remove and allow to cool.
  3. To same skillet add diced onion, season with salt and pepper, allow to cook for 2-3 minutes, and then remove from heat.
  4. Slice chicken sausage and line bottom of pie pan, top with onions before setting aside.
  5. Whisk together eggs and cream, pour into pie pan.
  6. Bake for 30 minutes, remove, top with asparagus and goat cheese, and then bake for an additional 15 minutes or until cheese begins to brown.
