Peanut Butter Pumpkin Fudge

The Kentucky Gent, a Louisville, Kentucky life and style blogger, shares his recipe for Peanut Butter Pumpkin Fudge.

Fudge always reminds me of my childhood. Of Holidays spent in my grandma’s kitchen sneaking handfuls of the stuff as she would whip it up year after year. Chocolate, peanut butter, and everything in between. So when I ran across this recipe for Peanut Butter Pumpkin Fudge I knew I owed it to her to give it a go, and let me tell you.. it completely lived up to the expectations.

Grit and Glitter is serving up her Grandma’s delicious, cruelty free stuffing today on her blog. Thanksgiving or Friendsgiving dinner isn’t complete without a plate and a half of stuffing, right?

Tomorrow I’m sharing my final recipe (Salted Caramel Apple Handpies, YUM), a cocktail to help you make your way through your family dinners (any guesses?), and a look at what our Friendsgiving ended up looking like. Stay tuned!

INGREDIENTS

  • 4 cups white chocolate chips
  • 1/2 cup creamy peanut butter
  • 2/3 cup pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons vanilla extract

INSTRUCTIONS

  • Line an 8×8” pan with foil and spray with cooking spray.
  • Gather all your ingredients; making fudge is fast work.
  • Place white chocolate chips and peanut butter in a large microwave safe bowl.
  • Heat on 50% power for 1 minute.
  • Stir, then continue heating on 50% power in 30 second increments, stirring between each, until melted and smooth. (Alternately, you can do this in a medium saucepan over medium-low heat on the stovetop. Just be sure to stir continuously.)
  • Once chocolate and peanut butter are melted together and smooth (remove from heat if doing on the stovetop), immediately stir in the pumpkin puree, spice, and vanilla.
  • Pour into prepared pan and let cool to room temperature on the counter.
  • Chill until set, then cut into squares.

NOTES

  • The fudge gets soft on the counter. Store in the refrigerator until serving.
