One of my favorite things about sitting down to dinner at a Mexican restaurant is that you’re immediately greeted with chips and salsa, and if you’re anything like me and my friends you add guacamole to the mix before your server even has time to take your drink order.
Why should a Mexican dinner at your house be any different? That’s right, it shouldn’t. I teamed up with Lunazul Tequila to throw a small going away party for myself and Miranda before we head off to India in September, and while you’ll have to wait a bit longer to see the finished product – excited to be sharing some video content with y’all again though!
Today’s recipe for Grapefruit Guacamole, that pairs perfectly with their Lunazul Paloma, will serve as a nice little teaser of how simple it is to celebrate a special occasion (or a fun night out) with your crew.
Best part? It’s a 5-ingredient recipe that takes no time to whip up, meaning you’ll have more time to spend with the crew drinking Palomas. That’s definitely a win win in my book.
I’ve been a fan of Lunazul for a while now as one of my fave local bars, Galaxie, uses them in their margaritas. Now that I’ve had the chance to try my hand at making cocktails with Lunazul I’m convinced that the tequila definitely plays a part in them being the best in Louisville. And now it’s time to invite some friends over and try them out for yourselves!

Ingredients
- 2 oz. Lunazul Blanco Tequila
- 6 oz. Grapefruit Soda
- Splash of Lime Juice
- Pinch of Salt
Instructions
- Combine tequila, lime juice and salt in a tall cocktail glass over ice. Top with citrus or grapefruit soda and garnish with a lime.
Grapefruit Guacamole
Ingredients
- 3 large, ripe avocados
- 1 tomato, diced
- 1 pink grapefruit
- 1 red onion, diced
- Juice of one lime
- Salt
- Pepper
Instructions
- Scoop out avocado into large mixing bowl and roughly mash with a fork.
- Dice tomato and onion, remove grapefruit from peel, add all three to avocado mixture, and stir combine.
- Squeeze lime over mixture, top with salt and pepper.
