Cookout season is officially upon us! And personally I couldn’t be more excited. I’ve got several friends with killer patios, and there’s several lakes within driving distance of me meaning that I’ve got plenty of places to celebrate the warmer weather. Sadly, Mother Nature can’t seem to cut us some slack when it comes to rainy weather. See I had originally planned to shoot this whole spread lakeside, BUT she had other plans. So I decided to bring this lil’ tiki-inspired shindig indoors.
This time of year I love to break out my copper pieces because A) they keep drinks super cold (important when it’s hot out) and B) they instantly make any party a little bit fancier. And recently I added a few new pieces to my arsenal, including these mugs and pineapple ( that also serves as a mug!). I’ll be the first to say that anything “tiki” related can quickly become overkill, but if you keep it to a simple/similar color family you’ll be set.
And what better food to serve up at a tiki-inspired cookout than fresh guacamole?! Ever since I started making my own guacamole at home I’ve not bought the premade stuff since. Why? Because I’m a firm believer in fresh is always better. Plus it’s really not that hard to do yourself, especially once you get the hang of it. Not convinced? HOW TO MAKE GUACAMOLE (STEP BY STEP):
- 2 avocados
- 1 can of RO*TEL
- 1 lime
- 1/2 red onion, diced
- Cut open avocados and scoop out flesh into a mixing bowl, mash to desired consistency.
- Add onion, salt, and pepper, top with lime juice, and then stir to combine.
- Serve immediately and enjoy!
Now if you’re really ready to go above and beyond and wow those Memorial Day guests of yours make yourself some fresh tortilla chips! I promise it’s easier than it sounds. While you’re picking up RO*TEL at your local Walmart grab a pack (or two) of tortillas. Flour or corn will do, but I’ve got to say I love flour for these. They’re SO much different than what you get normally, and I love to change things up. Once you’re home, and the guacamole is all mixed up you’ll just slice up your tortillas, heat up some oil, and fry away.
Honestly, the hardest part is getting the time down. But I implore you, don’t walk away from your stove. They brown up much faster than you’d think. I season mine with salt, chili powder(s), and some lime juice once they’ve had a chance to cool, and then they’re ready to go! Looking for more Memorial Day recipe inspiration?
